7 Simple Summer Dinners The Family Will Love

With a busy work schedule and the kids summer activities, the last thing you wan't to think about is what to cook the family for dinner. Rather than resorting to frozen pizzas and PB&J sandwiches, try these yummy, simple dinner recipes that are just as fast!

1) Caprese Grilled Cheese Sandwiches
You will Need:
Multigrain Bread
Butter
Mozzarella
Tomatoes
Basil Leaves
Balsamic Vinegar

Spread butter on 8 pieces of multigrain bread.  Then cut 4 fairly thin slices of mozzarella, Cut 4 slices of Tomato, and get 4 basil leaves. First put the slices of mozzarella on the bread, then the tomatoes, and then the basil leaves. Drizzle on some balsamic vinegar and then place the other piece of bread on top. Cook the sandwiches on medium-low for 10 minutes on one side and then about 7 minutes on the other. Serve and enjoy!

2) Grilled Shrimp Tacos
You will need:
1 package of grilled shrimp
8 soft flour taco shells
2 cups shredded cabbage
1 avocado
Pineapple salsa.

Prepare shrimp according to package directions. Place about 1/8 cup of shredded cabbage in taco shell, place 3 slices of avocado on top of shredded cabbage, place 4-5 shrimp on top of avocado and then put some pineapple salsa on top.

3) Taco Salad
You will need:
1lb lean hamburger meat
1 packet of taco seasoning
2/3 cup water
4 tomatoes diced
1 head lettuce chopped
1 cup grated cheese
8oz Catalina or French dressing
1 bag Doritos crushed
1 can of kidney beans drained

In a large skillet, cook hamburger meat until it is no longer pink. Stir in taco seasoning and water. Let it sit for about 5 minutes and then remove from heat. In a large bowl, layer lettuce, tomatoes, cheese, and kidney beans. Top with taco meat. Toss with dressing. Add the crushed Doritos and toss thoroughly.

4) Stuffed Peppers
You will need:
6 large bell peppers
1lb lean ground beef
2 tablespoons chopped onion
1 cup cooked brown rice
1 cup tomato sauce
Shredded mozzarella

Cut thin slice from stem end of each bell pepper to remove top of pepper.  Remove seeds and rinse peppers.  Cook the ground beef in a skillet until it’s no longer pink. Remove skillet from heat and add chopped onion, brown rice and half of the tomato sauce. Mix together and add into the stuffed peppers. Heat the oven to 350 degrees and place peppers in an ungreased square glass baking dish. Pour the rest of the tomato sauce of the peppers. Cover with tin foil, bake 30 minutes and sprinkle with cheese.

5) Crockpot Hawaiian Chicken
What you need:
1 cup pineapple juice
½ cup packed light brown sugar
1/3 cup light soy sauce
2 lb frozen chicken breast tenderloins
1 large can pineapple chunks.

In a large bowl combine the pineapple juice, brown sugar and soy sauce. Place the chicken tenderloins in the crockpot and pour the sauce mixture over the chicken. Cover and cook 6-8 hours on low depending on your crockpot. (It’s easiest to prep in the morning and leave it cooking all day at work so when you come home dinner is ready.) When there is 1 hour of cook time remaining...drain the pineapple chunks and pour the chunks on top of the chicken.

6) Chicken Avocado Burritos
What you need:
2 cups cooked and shredded chicken
1 cup of grated cheese
1 diced avocado
2 tablespoons of cilantro chopped
4 large tortillas
4 tablespoon sour cream
1 tablespoon oil

Mix the chicken, cheese, cilantro, and the diced avocados. Spread 1 tablespoon of sour cream on each tortilla, add ¼ of the mixture, then roll up into a burrito. Heat 1 tablespoon oil into a pan and place all four tortillas on the pan, cook for 2 minutes on medium- high heat. Flip on the other side and cook for another minutes or until the the tortillas are golden.

7) Stuffed Sweet Potatoes
What you need:
6 large sweet potatoes
6 tablespoons butter
6 tablespoons light brown sugar
 ½ teaspoon ground cinnamon
1/8 teaspoon salt
1 cup mini marshmallows.

Mix the butter, brown sugar, cinnamon, and salt in a bowl. Preheat oven to 400 degrees F. With a fork, prick the sweet potatoes in a couple of spots and place them on a sheet pan. Bake for about 30 minutes, or until a knife poked in the center goes in easily. Remove from oven and let stand until cool enough to handle but still very warm. Cut potatoes in half lengthwise and add the brown sugar mix.  Then top with marshmallows and place back in the oven for 5-10 minutes until marshmallows are golden.
